I recently met with Katie, the lady behind these great new chocolates over a glass of wine at The Partridge in Wallingford, after tasting them with coffee following a meeting.
Katie Christoffers, the creator or Matcha Chocolat, has created something I believe that is unique which are handmade chocolates combining fine chocolate with a wide variety of fine and rare teas, herbs, fruits, and spices from around the world.
Her idea was born to create a confection that would be the perfect balance between the taste of tea and chocolate and I believe that she has captured that market.
Kate is not a chef by trade, but after six years experience in neuroscience and biochemistry research it emerged that she had a great passion for tea and chocolate. So, she now brings her own unique skills to the world of artisan chocolate.
The chocolates are lovely and below is a just a taster of the flavors she has perfected.
Katie has only been in business just under a year and already she has won the acclaimed 2 Gold Star Great Taste Award for the Jasmine Tea chocolate and 1 Gold Star Great Taste Award for the Violet chocolate which is amazing, so congratulations.
Masala Chai Caramel – Milk chocolate heart filled with caramel flavored with an authentic blend of Indian chai tea.
Jasmine Tea – White chocolate ganache infused with jasmine white tea. Enrobed in white chocolate.
Masala Chai – Dark chocolate shell filled with a milk chocolate ganache that is infused with an authentic Indian Chai tea. Topped with crystallized ginger.
Fresh Mint – Dark chocolate ganache flavored with fresh garden mint. Enrobed in milk chocolate.
Violet – Dark chocolate shell filled with milk chocolate ganache flavored with a violet scented black tea. Topped with a crystallized violet petal.
